Abstract(s)
A presente dissertação tem como objetivo de estudo a segurança ocupacional dos trabalhadores do
departamento de F&B na hotelaria. O estudo será aplicado ao departamento de F&B de um hotel de
quatro estrelas, situado na ilha da Madeira. Nesta senda, após a revisão da literatura sobre conceitos como
segurança no trabalho, ambiente de trabalho e segurança, acidentes de trabalho, foi realizada uma
avaliação dos riscos ao departamento de F&B com o objetivo de analisar as ameaças a que os
colaboradores estão expostos diariamente no exercício das suas funções. O estudo foi complementado por
uma pesquisa qualitativa, suportada por entrevista ao diretor de operações do referido hotel, de forma a
compreender a visão das chefias relativamente à aplicabilidade da segurança e saúde no trabalho, e com a
qualidade de vida dos trabalhadores do departamento em estudo. Foi ainda procedido à elaboração de
questionários aplicados aos colaboradores com o intuito de analisar as perspetivas relativamente à gestão
de segurança aplicada pela entidade hoteleira. Os resultados mostram que a maioria dos colaboradores da
entidade apresentam uma falta de conhecimento das medidas preventivas e de alguns dos perigos a que
estes estão expostos. Foi possível concluir que esta falta de conhecimento é resultante da própria cultura
da entidade, que apesar de recorrer a serviços externos de segurança e saúde não possuí atividades de
planeamento, responsabilidades, competências, práticas, procedimentos, processos e recursos, para
desenvolver a política de segurança e saúde no trabalho dentro da própria organização.
Abstract This dissertation aims to study occupational safety in F&B department in the hotel industry. The study will be applied to the F&B departament of a four star hotel, located in Funchal City. In this sense, after reviewing the literature on concept such as workplace safety, work enviroment and safety, accidents, was carried out a risks assessment inherent to the F&B department to analyzing the threats to wich employees are exposed. The study was complemented by qualitative research, supported by an interview to the operations director of the hotel, in order to understand their views regarding health and safety, and the quality of life. Questionnaires were also drawn up and applied to employees with the aim of analyzing their perspective regarding the security management applied by the hotel. The results show that the majority of the entity’s employees have a lack of knowledge of preventive measures and some of the risks to they are exposed. It was possible to conclude that this lack of knowledge is a result of the company own culture, which despite using external Health and safety services does not have planning activities, responsabilities, skills, practices, procedures, processes and resources, to develop the health and safety policy at work.
